Radish, Watermelon (try it raw - yum!)

Watermelon radish is so named for the fact that it has a bright green rind and an even brighter fuschia-pink flesh! It tastes like a milder, sweeter radish (as compared to the regular garden variety), and it can be cut up into sticks like carrots for eating raw (alone or with dip). It adds incredible colour to a veggie platter, and kids are usually intrigued enough to give it a try. Our two love it!

It can also be grated over a salad (gorgeous!), added to cole slaw, sauteed or stir-fried. We like it thinly sliced in miso soup as well. Enjoy!
