This week's kale tops may be either green curly kale or black lacinato kale (sorry, we are not able to specify, as we need to be flexible in order to ensure we can get enough BC greens for all of our customers...sometimes flexibility is what it takes to support local/BC product!)
In either case. these are the new growth/flowering tops of overwintered kale plants, and it's lovely tender growth, perfect for chopping and steaming or stir frying, just like you would with broccoli, with a very similar flavour. It's also tender enough (minus the stalks, of course!) for slicing thinly into salads or cole slaws.
