Sunchokes (aka Jerusalem Artichokes)

Sunchokes, also known as Jerusalem artichokes, are little tubers that resemble ginger root. They have a potato-like texture, but are suitable for low-carb diets. Sunchokes also assist in blood sugar control and are suitable for diabetics. They are high in iron, thiamine, and potassium, and are low in fat.

They contain inulin, a "pre-biotic" which is a good thing...but it CAN cause flatulence...so go easy on these to start!

They are especially nice sliced, tossed with olive oil, and roasted.
