Peanut Butter Rice Chops

Ingredients

½ C Natural Peanut Butter (smooth)
2 C Brown rice, cooked
½ tsp Salt
½ tsp Celery Salt
¼ C Onion, chopped
1 Egg, beaten

Instructions

Measure first 5 ingredients into saucepan. Heat and stir until mixture comes to a boil. Remove from heat, and allow to cool (can be placed in the fridge). Stir egg into cooled mixture. Let stand for at least 30 minutes in refrigerator to firm up enough to handle. Using about ¼ C each, shape into chops (patties). Arrange on greased baking sheet. Bake in 375° F oven for 10 minutes. Turn chops. Continue to bake for 10 minutes more. Makes 6 small chops.
