Spicy Sesame Noodle, Green Bean, and Carrot Salad

Ingredients

1/4 cup fresh lime or orange juice
3 Tbsp canola oil
3 Tbsp soy sauce
2 Tbsp packed brown sugar
1 Tbsp sesame oil
1 Tbsp minced garlic
1 Tbsp grated orange peel
9 oz beans, in 1/2 inch diagonal pieces
2 small hot peppers, minced (optional)
9-oz pkg angel hair or rice vermicelli
2 cups shredded carrots
1 cup thinly-sliced green onions

Instructions

*Stir juice, canola oil, soy sauce, brown sugar, sesame oil, garlic, orange peel, and hot peppers in a medium bowl. Season with salt and pepper and let sit for 30 minutes to blend flavours.

*Cook green beans in large pot of boiling water until crisp-tender, about 2 minutes. Using a slotted spoon, transfer beans to cold water and cool. Drain well and pat dry with paper towel.

*Return water to boil. Add pasta and cook until just tender. Drain, rinse under cold water, and drain well.

* Combine green beans, pasta, carrots, green onions and dressing in a large bowl. Toss to coat. Season with salt and pepper. Can be made 6 hours ahead. Cover and chill.
