Green Bean Salad with Walnuts

Ingredients

1 C coarsely chopped Walnuts
ľ C Olive oil
Ľ C Wine Vinegar
1 Tbs chopped fresh Dill
˝ tsp minced Garlic
Ľ tsp Salt
Ľ tsp Pepper
1 ˝ lb of fresh Green beans (cut recipe accordingly)
1 small Red onion – thinly sliced
4 oz of Feta cheese

Instructions

Toast walnuts in a shallow pan at 350 degrees, stirring occasionally for 5 to 10 minutes or until they are toasted. Set aside. Combine oil, vinegar, dill, garlic, salt, and pepper. Cover and chill. Cut the beans into thirds and arrange in a steamer basket over boiling water. Cover and steam for 15 minutes or until green beans are crisp-tender. Immediately plunge the beans into cold water to stop the cooking process; drain and pat dry. Combine the walnuts, beans, onion, and cheese in a large bowl; toss well and chill. Pour oil mixture over beans and walnuts 1 hour before serving and toss gently.
