Cucumber and Mint Salad

Ingredients

6 C Cucumbers, sliced
1 Green bell pepper, diced
3 Green onions, sliced
¼ C minced Mint
¼ C Lemon juice
1 Tbs Olive oil
2 Tbs Balsamic vinegar
Fresh ground pepper and Salt, optional

Instructions

Combine the cucumbers, peppers, onions, and mint in a salad bowl. In a separate bowl, whisk together the remaining ingredients. Toss with the vegetables and serve. Serves 6.
