Watermelon Radish Salad

This is a Japanese type salad, more of a garnish or “pickle”.

Ingredients

Peel the tough outer skin off 1 watermelon radish, then cut in half and slice into very thin rounds (Or grate it). Cut the rounds into slices and toss with 1 T. rice or other mild vinegar. Grate 1 or 2 carrots and add to the radish. With a grater or zester, remove the zest from one orange to make 1 T. and add to the radish. If possible, allow this mixture to sit for 15 minutes, tossing occasionally.

Make a dressing with 1 T. soy sauce, 2 T. rice vinegar, 1 T. fresh squeezed orange juice, 1 t. olive oil and 1 t. sesame oil. Toss with the vegetables, then add 2 T. toasted sesame seeds or almonds.
