Broccoli with Orange Peel & Walnuts

Ingredients

2 C Broccoli pieces (bite size)
1 Orange
1 Tbs Vegetable oil
¼ to ½ C Walnuts (or pecans)
¼ to ½ C Tbs finely minced fresh Ginger
2 Tbs Tamari (or reduced sodium soy sauce)
Juice of one Orange
½ Tbs Lemon pepper

Instructions

Remove peel of the orange in one inch strips. Remove any white pith with a sharp knife. Heat oil over medium heat in a 12 inch non-stick skillet. Add orange peel and nuts. Sauté until peel just begins to turn golden on edges, but do not burn. This will take only two to three minutes. Add broccoli and sauté five minutes. While cooking broccoli, sprinkle mixture with the orange juice. After about four minutes, add tamari and lemon pepper. Stir well and serve either hot, warm, or chilled.
