Asian Noodle Salad with Toasted Sesame

Ingredients

Salad

1 8-oz package Soba noodles
¼ C chopped Cilantro leaves
¼ C toasted Sesame seeds

Dressing

2 Tbs toasted Sesame oil
3 Tbs Tamari
3 Tbs Balsamic vinegar
1 Tbs Maple syrup
1 Tbs Hot pepper oil

Instructions

To make this salad even more delicious, try adding chopped cabbage, chives, cubed tofu or cooked chicken breast, radishes, or scallions.

Cook soba noodles according to package directions. Drain and rinse in colander. Combine toasted sesame oil, tamari, vinegar, maple syrup, and hot pepper oil in small bowl; whisk together. Place drained noodles in a large bowl. Add dressing, cilantro and sesame seeds; toss gently. Add optional chopped vegetables and toss again.
