Asian Cabbage Slaw

Ingredients

1/2 lg Chinese Cabbage
4 med/lg Carrots
1 Cucumber, peeled & seeded
2-3 Green Onions, diced
1/2 C Cilantro
1/2 C roasted Peanuts (or Sunflower Seeds)
1/2 C Thai-style Peanut Dressing or Sauce
(your own recipe, or a store-bought one)

Instructions

Thinly slice the cabbage, and julienne the carrots, cucumber and green onions (cut into thin, long strips). Toss together with the cilantro. Warm the dressing in a small saucepan, then pour over the salad, and toss to coat. Add the nuts, toss again, and serve with a sprinkling of toasted sesame seeds and a garnish of cilantro.
