Fennel and Bean Salad

Ingredients

3 Tbsp olive oil
1 tbsp white wine vinegar
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp red pepper flakes
1/2 tsp dried thyme
15 1/2 oz can chick peas
1 clove garlic, minced
1 med fennel, cored & sliced (plus leafy fronds, for garnish)

Optional garnishes: crumbled gorgonzola cheese, minced fresh Italian parsley

Instructions

Whisk together first 6 ingredients in a bowl; add beans, fennel and garlic, tossing gently to coat. Sprinkle with cheese and parsley. Cover and chill at least 1 hour. Garnish, if desired, and serve over a bed of salad greens, thinly sliced Chinese cabbage, and/or chilled, cooked grains (eg. quinoa, millet, or rice).
