Grean Bean, Walnut, and Feta Salad

Ingredients

Salad
1 to 1 ½ lbs Green beans, cut in half
1 C diced Red onion
1 C chopped Walnuts, toasted
1 C crumbled Feta cheese

For the dressing:

½ C Extra-virgin olive oil
1 clove Garlic, minced
½ C packed fresh Mint leaves, chopped finely
½ tsp Salt
¼ C White wine or tarragon vinegar
¼ tsp fresh ground Black pepper

Instructions

Bring 2 quarts salted water to a boil in a saucepan over medium high heat. Add the green beans, and cook them until they are crisp-tender, about 4 minutes. Drain the beans and plunge them immediately into ice water to stop them from cooking any further. Drain them again and pat dry. Transfer the beans to a shallow serving bowl. Sprinkle with the walnuts, onion, and feta. To make the dressing, combine the oil, mint, vinegar, garlic, salt, and pepper in a lidded jar and shake to blend. Pour the dressing over the bean mixture, toss thoroughly and serve.
