Asparagus Vinaigrette

Ingredients

1 lb Asparagus spears (16-24), large end trimmed
1/4 C Vegetable stock
2 Tbs White wine vinegar
1 tsp Soy sauce or tamari
1/2 tsp grated Orange or lemon peel
1/4 tsp fresh ground black pepper

Instructions

Place all ingredients in a saucepan and cook, covered, until tender. Do not overcook or asparagus will get too soft.
