Broccoli, Pea, and Kohlrabi Salad with Apricot Miso Dressing

Ingredients

1 C Broccoli florets
1 C Kohlrabi, peeled and cut into matchsticks
1 C Snap peas (in 1 inch pieces)

Instructions

Lightly steam or blanch the above veggies (just until tender-crisp). Set aside to cool. Add the ingredients for the "Miso Mixture" (see recipe for "Tofu & Kale" in Salads and Dressings) with 1 or 2 pitted apricots. Blend until smooth. Dress veggies to taste, top with toasted sesame seeds, and chill.
