Curry Artichoke Dip

This one has kick! It has a creamy texture, is low in calories, and provides lots of protein and calcium.

Ingredients

1 can Artichoke hearts, drained and squeezed dry
1/2 box of Soft Tofu
¼ C Rice Milk
2 cloves Garlic, minced
½ tsp ground Coriander
½ tsp ground Cumin
¼ tsp Turmeric
1/8 tsp Salt
1/8 tsp Cayenne pepper
1/8 tsp Hot mustard
1/8 tsp Ground cloves
1/8 tsp Black pepper

Instructions

Combine all in food processor and blend. Put in microwave safe dish and heat for 2-4 minutes or place in an ovenproof dish, cover, and bake at 350° until hot. Serve hot with crackers and assorted vegetables.
