Lemon-Thyme Marinade for BBQ

We like this combo for marinating free-range chicken breasts, but it could also be used for tofu kabobs, or inside a foil-wrapped veggie "parcel" for the bbq.

Ingredients

Handful of fresh thyme, chopped (2-4 Tbsp)
Juice of 2 lemons
1 Tbsp tamari or Bragg's
2 cloves crushed garlic
pinch of red chili flakes
pinch of sea salt & freshly-ground pepper
2 Tbsp olive oil or canola oil

Instructions

Mix ingredients together in a container with a lid and shake well. Add the item to be marinated, and shake again, gently. Refrigerate until ready to grill. If extra liquid is needed, add more lemon juice, oil, or water.

Excess marinade can be used for basting over while grilling.
