Cherry Tomato Salsa

Ingredients

4 C Cherry tomatoes
1 large Shallot, minced
1 large Garlic clove, minced
2 Tbs minced fresh Coriander
1 Tbs White wine vinegar
2 Serrano chilies, seeded and minced
2 tsp fresh Lime juice
¼ tsp Salt

Instructions

Coarsely chop the tomatoes. In a medium bowl, combine the chopped tomatoes and their juices with the shallot, garlic, coriander, vinegar, chilies, lime juice and salt. Stir well. Cover with plastic wrap and set aside for at least 2 hours to blend the flavors.
