Sun-dried Tomato and Roasted Garlic Pesto

Ingredients

2 heads of roasted Garlic
1 C Sun-dried tomatoes (rehydrate with water if using dried tomatoes)
1/3 C Parsley
2 Tbs chopped Green onion
2 Tbs Pine nuts
2 Tbs grated Parmigiano-reggiano cheese

Instructions

In a blender or food processor, place the roasted garlic cloves, sun-dried tomatoes, parsley, green onions and nuts. Process until finely minced. Add the remaining oil and the cheese and process until blended. Transfer to a small bowl, cover and refrigerate. Serve with your favourite crackers or bread or as a pasta sauce.
