Zucchini Boats

Ingredients

2 med tomatoes, diced
1 med onion or 5 green onions, diced
½ of a pepper, diced
2-3 tbsp olive oil
Fresh basil, torn in small pieces
2 med zucchini, halved lengthwise
Salt and pepper to taste
Parmesan cheese

Instructions

Combine all ingredients except zucchini and cheese and allow to marinate for 10 to 20 minutes. Remove most of the flesh of the zucchini with a large spoon. Save and use in soup or pasta sauce. Stuff zucchini with marinate and sprinkle with parmesan cheese. Bake at 350F until zucchini is tender, 20 - 40 minutes depending on size. Enjoy any excess marinade on crackers while you wait for the zucchini to cook! Serves 4.
