Kale with Sauteed Apple & Onion

Serves 2. Time: 15 minutes

Ingredients

1 apple, tart one is best
1 medium onion, cut into ¼ inch wedges
¼ tsp curry powder or curry paste
2 tbsp olive oil
½ cup water
1 lb kale with stems and ribs removed, coarsely chopped

Instructions

Peel, quarter and core apple, then cut into ¼ inch wedges. Heat oil in a large skillet until hot but not smoking. Sauté onions until golden. Add apple, curry powder and sauté, stirring until apple is almost tender, about two minutes. Add kale and water and cook, covered, until kale is tender and most of the liquid is evaporated, about 5 minutes. Season with salt to taste.
