Broccoli (or Cauliflower) Au Gratin

Ingredients

3 to 4 cups broccoli (or mixed veggies)
1 medium onion, diced

1-1/4 cup soy milk
3 Tbsp raw cashews
1 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg
1 clove fresh garlic, crushed
2 Tbsp nutritional yeast

3 Tbsp olive oil
1/3 cup unbleached flour (your choice)

2 Tbsp whole-wheat bread crumbs
1/2 tsp paprika

Instructions

1. Cut broccoli (or veggies) and onions into medium pieces. Set aside.

2. Blend next seven ingredients in blender or food processor until smooth. Add a bit of water if necessary to help blending process.

3. Pour blended mixture into a saucepan and heat gently, stirring often.

4. In another saucepan, add oil over medium heat. Add flour to make a roux. Whisk in the blended mixture to make a light cream sauce. (For thicker sauce, use more roux.)

5. Pour the sauce over the veggies, and mix.

6. Oil a casserole dish, and pour in veggies and sauce. Sprinkle bread crumbs and paprika over veggies.

7. Cover and bake at 350 degrees for 45 to 55 minutes. Enjoy!
