Roasted Apples, Onions, and Fennel

Ingredients

6 apples
2 yellow onions
4 heads of fennel medium size
¼ cup Balsamic vinegar
½ cup olive oil
2 Tbs. orange juice
1 tsp. fresh thyme minced
2 tsp. salt
½ tsp. fresh ground pepper

Instructions

Preheat oven 375 degrees. Place the cut apples, and thinly sliced fennel and onions into a bowl. In a separate bowl, whisk the balsamic vinegar, olive oil, orange juice, thyme, salt and pepper. Pour over the apples, fennel, and onions, and toss well. Place the mixture into a medium sized roasting pan and cover with foil. Roast for 30 minutes then remove the tin foil. Stir well bringing up the juices from the bottom of the pan and continue to roast another thirty minutes, stirring the vegetables every ten minutes or so. The apples, onions and fennel should be soft with golden brown edges.
