Delicata Squash with Citrus-Herb Sauce

Ingredients

1 Tbs grated Lemon rind
½ C Water
¼ C Orange juice
¼ tsp dried Tarragon
1/8 tsp White pepper
1 Tbs grated Orange rind
¼ C Lemon juice
1 ½ Tbs Sugar
1 Tbs Butter
1 lb of Delicata squash

Instructions

Preheat oven at 350°F. Combine lemon and orange rind, water, lemon and orange juice, sugar, and tarragon in a saucepan. Bring to a boil, reduce heat and simmer until reduced to ½ C (about 10 minutes). Remove from heat and stir in butter and pepper. Keep mixture warm. Cut the squash lengthwise and into quarters. Discard the seeds and stringy pulp. Place the squash, cut side down, on a baking sheet. Bake for 30 minutes or until tender. Cool slightly and scrape the inside of squash with a fork. Drizzle the sauce over the squash. Serves 6.
