Saucy Savoy Cabbage

Ingredients

1 medium Savoy cabbage
1 large Onion
2 Tbs Olive oil
3 C Water
1/3 C Molasses/brown rice syrup
4 Tbs Tamari
Spices - pinches of savory, coriander, dill weed, sea salt, black pepper, whole caraway seed, whole black pepper corns, fennel seeds, etc - mix and match and add more!

Instructions

In a large pot, saute large pieces of onion in olive oil. Core and chop cabbage into 6-10 large half-moon chunks and set aside. Combine water, tamari, molasses, and spices in a bowl and mix to dissolve the molasses. When the sauteed onions are soft, place the cabbage chunks into the pot and drizzle the molasses-water mixture over it. Cover the pot and bring to a boil over medium heat. Simmer, stirring occasionally and spooning juice from the bottom over the cabbage, for 15-30 minutes or until cabbage is tender.
