Baked Yams and Squash

Recipe for Category Vegetable Side Dishes

Ingredients

1 Yam, cubed
½ Butternut squash, cubed
1 Granny Smith or Mutsu apple, cubed
½ C Water
1/3 C Brown sugar (more or less, to taste)
dash of Cinnamon, optional

Instructions

Put all of the cubes in a 2 quart baking dish. Add all of the water and about 1/2 of the brown sugar. Pop into a 350°F oven for about 60-90 minutes, until all cubes are soft. Check a couple of times to make sure all the water hasn't gone -- cover the dish. Add the rest of the sugar and whatever cinnamon you think appropriate when you remove from the oven.
