15 Minute Cauliflower, Kale & Cherry Tomato Stir Fry

Ingredients

1 med Onion, in thin wedges
1-2 Tbs Vegetable broth
2-4 cloves Garlic, chopped
2 Tbs Ginger, minced
2-3 C Cauliflower, in small florets
2-3 C finely chopped Kale
4 oz firm Tofu, in 1/2 inch cubes
1/2 pt Cherry Tomatoes, halved
1-2 Tbs Rice Vinegar
2-4 Tbs Water
1-2 tsp Toasted Sesame Seeds
Salt & Pepper to Taste

Instructions

Heat broth in a wok or large skillet. Stir fry onion in broth over med-high heat for 2-3 min, stirring constantly. Add garlic, ginger, and cauliflower and continue to stir fry for another 5-8 minutes, stirring constantly. Add tofy, kale, cherry tomates, soy sauce, vinegar and water, turn heat to low and cover for 3-5 minutes, or until vegetables are tender, yet still crisp. Season with salt and pepper and sprinkle with sesame seeds.
