Greek-Style Salad with Spaghetti Squash

Ingredients

3 Tbs Red wine vinegar
1 tsp dried Oregano
1/4 tsp Salt
1/4 tsp Black pepper
2 whole Garlic clove, minced
3 C Spaghetti squash, cooked
2 C chopped Tomato
1 C Cucumber, chopped
8 oz Feta cheese, cubed
1/4 C diced Green bell pepper
1/4 C diced Red onion
1/8 C chopped pitted Kalamata Black Olives
15 1/2 oz Chickpeas, canned, drained

Instructions

Combine first 5 ingredients in a bowl; stir well with a whisk. Combine squash and remaining ingredients in a large bowl. Add vinegar mixture; toss well. Cover and chill. Serving size 2 cups.
