Baked Brains (Spaghetti Squash with tomato sauce)

Ingredients

1 Spaghetti squash
2 Tbs Water
14 ½ oz can Italian-style stewed Tomatoes, drained
1/4 C grated or shredded Parmesan cheese (optional)

Instructions

Remove seeds from squash. Place squash, cut side down, in a baking dish. Add water. Bake at 350°F until tender (about 40 minutes). Using pot holders, hold squash in one hand and with a fork shred squash pulp into strands, letting them fall into the baking dish. Add drained tomatoes, tossing to coat. Sprinkle with Parmesan cheese if desired.
