Asparagus with Lemon dressing

Ingredients

1 lb Asparagus
3 Tbs Olive oil
2 Tbs freshly squeezed Lemon juice
1 tsp Dijon mustard
1 Tbs fresh Parsley, chopped
Salt and pepper to taste

Instructions

Using a deep soup pot, bring water to boil. Trim ends of asparagus and add to water (bottoms down). Asparagus should be about 1/3 immersed in water. Boil/steam for 10-15 minutes or until tips are soft. Drain and let cool. Combine last 5 ingredients in bowl and whisk together. Serve on individual plates with sauce on side for dipping. Don’t forget some fresh, crusty bread!
