Pickled Carrot and Radish

Ingredients

1 C Carrots, grated
1 C Radishes, grated
1 Tbs Salt
2 Tbs Honey or sweetener of your choice
1/4 C White wine vinegar (or rice vinegar)

Instructions

Toss carrot, radish, and salt together in a medium bowl. Let stand for 10 minutes.
Transfer to a sieve or colandar and rinse. Squeeze the mixture to remove excess water. Place carrot and radish in a medium bowl. Add honey and vinegar; toss to coat.
Cover and marinate in the refrigerator for 2 hours. Best served chilled.
