Holiday Green Beans

Ingredients

2 1/2 Tbs Dijon mustard
1/4 tsp Salt
1/4 tsp freshly ground Black pepper
1/4 tsp dried Tarragon
1/2 lbs Green beans, trimmed
2 tsp Oil
3/4 C thinly sliced Shallots
2 Tbs Sour cream or Yogurt

Instructions

Steam green beans, covered, 5 minutes or until tender. Keep warm. Heat oil over medium heat. Add shallots; sauté 3 minutes. Stir in mustard mixture and green beans; toss well. Cook for 2 minutes or until thoroughly heated. Stir in sour cream or yogurt, and remove from heat. Serve immediately.
