Mashed Peppered Rutabaga

Ingredients

1 Rutabaga
1/2 C Yogurt
1/2 tsp Salt and pepper
1 C shredded Gouda cheese (try herbed or plain Jerseyland Gouda from Urban Harvest)

Instructions

Cut thin slice off bottom of rutabaga. Peel and cube. In saucepan of boiling salted water, cook rutabaga, covered, for 25 to 30 minutes or until tender. Drain and return to saucepan over low heat for about 30 seconds or until dry. Using potato masher, mash thoroughly; mix in yogurt, salt and pepper. Stir in cheese just until slightly melted. For smoother, quicker mashing, use an immersion blender or food processor.
