Tofu with Ginger, Chili & Leeks

Ingredients

1 pkg firm tofu
3 Tbsp Tamari or Bragg's
2 Tbsp dry sherry
2 tsp honey
2/3 cup veggie stock
2 tsp arrowroot or cornstarch
3 Tbsp oil
3 leeks, thinly sliced (or 6 baby)
1 red chili, seeded and sliced
1 in piece fresh ginger, diced

Instructions

1. Marinate cut-up tofu in a bowl with tamari and sherry for 30 minutes. (or a day ahead in the fridge)
2. Strain tofu from the marinade; reserve the juices. Mix the marinade with the honey, stock, and arrowroot or cornstarch to make a paste.
3. Heat oil in pan. Fry tofu until crisp on outside; remove from pan.
4. Add leeks, chili, and ginger to hot oil just until soft. (about 2 minutes)
5. Return the tofu to the pan together with the marinade, and stir well, until the liquid is thick and glossy.
6. Enjoy with rice or noodles!
