Vegan Risotto

Ingredients

4 C Vegetable stock
1 small-medium Onion, chopped
3 cloves Garlic, minced
4 Tbs Olive oil
1 C Arborio rice, unrinsed
3 Tbs White wine
Lightly steamed vegetables of your choice (ie. onions, carrots, broccoli)
Salt and pepper

Instructions

Heat vegetable stock. Sauté the onion and garlic in oil on medium-low heat for about 5 minutes, or until onion is soft. Add the rice, making sure that it is well-coated in the oil. Add the white wine and cook, stirring, until the mixture thickens. Add hot stock about ½ to1 cup at a time, stirring continuously and allowing to thicken between each additional amount. After about 20 minutes, all of the stock will be in and the rice should be soft, but not mushy. Add the vegetables, season with salt and pepper, and cook for another 5-10 minutes. Serve hot with fresh whole grain bread and a salad.
