Tea-braised Tofu

Ingredients

4 Tbs Tea leaves (your choice)
2 quarts spring Water
Olive oil, enough to coat pan for searing
4 cloves Garlic, smashed then finely chopped
1 1/2 C Onion, thinly sliced
1/4 C Honey
1/2 C stewed Tomatoes or fresh chopped tomatoes
8 oz of firm Tofu

Instructions

Brew tea (room temperature water for green, white, or black tea (for 30 minutes), hot water for 10 minutes for Rooibos) and strain. Sauté the garlic and onions in the olive oil until softened. Add honey and tomatoes and stir until well mixed. Marinate the tofu in the tea mixture for 15 minutes in an oven-proof pan. Add sautéed mixture and bake at 375F until thoroughly heated. Serve with a variety of your favourite steamed vegetables.
