Yam Burgers

Ingredients

1 1/2 lb Yams, steamed
3-4 Green onions
1 C Oatmeal, fine
3 Tbs Flax seeds
2 tsp Dill (dried)
1-2 tsp Black pepper
1 tsp Salt
1 pinch Cayenne

Instructions

Scrub the yams well and rinse. Trim off any ends, and any blemished areas. Leave the peel on for fibre and texture. Cut yams into one inch thick sections, and steam until tender. Place the steamed yams into a medium size mixing bowl and mash with a fork. Continue mashing until yams are an evenly thick, chunky consistency. Chop the green onions finely and add to the bowl, along with the oatmeal, flax seeds, dill, black pepper, salt, and cayenne. Mix well, and let sit for ten minutes before forming into patties. Form into 4 large, or 6 small patties and bake or fry on both sides until golden. Enjoy fresh and hot, on a whole grain bun.
