Red Chard Roll-Ups

Ingredients

1 cup brown rice (cooked)
2 Tbs pine nuts
2 Tbs raisins
½ tsp parsley
1/8 tsp garlic paste
salt (to taste)
1½ Tbs olive oil
½ tsp lemon juice
sprinkle of rice vinegar
red or swiss chard leaves

Instructions

In a bowl, add rice, pine nuts, raisins, parsley, garlic paste, salt, rice vinegar, lemon juice, and olive oil, and mix well. Remove the chard stems where the leaf begins. Place approximately two tablespoons of the mixture approximately one inch away from the edges. Roll like a tamale. Be very gentle while you are rolling, as the thick stem tends to crack and/or break through the leaves. Place seam side down in a steamer. Repeat until the rice mixture is finished.

Place the steamer in a pan with one inch of water in the bottom and cover. Steam until the chard leaves are dark green.
