Stir-Fried Broccoli & Bok Choy

The original recipe calls for only broccoli - however, bok choy and other types of Asian greens (pak choi, tatsoi, gai lan, etc.) make wonderful additions as well!

Ingredients

½ C Brown or Long-grained Rice (uncooked)
1 cup Broccoli florets, chopped
1 cup Bok Choy stalks & greens, chopped
3 tsp Sesame Oil
½ Onion (medium size)
2 Garlic Cloves (crushed)
¼ C Vegetable Stock
¼ Cilantro (fresh and chopped)
Pepper and Salt

Instructions

Cook rice partially. Wash and chop broccoli and bok choy, and add to rice and finish cooking. In a saucepan, add oil and cook the onions. Add garlic, rice, broccoli, and bok choy. Toss for several minutes. Mix stock, cilantro and remaining oil. Add to saucepan, toss well and add salt and pepper to taste. Eat as is, or wrap** it!
