Quick Pak Choi Stir-Fry

This is a basic stir-fry recipe which can be used with almost any greens. Bok choy, kale, and chard would all work nicely, and a mixture of various hardy greens is even better!

Ingredients

1 Tbsp sesame or peanut oil
1 bunch pak choi, washed, with white stalks and green leaves chopped separately
2 green onions, cleaned and chopped
2 cloves garlic, crushed
1 tsp freshly grated ginger
2 handfuls of spinach, washed and torn into pieces
splash of tamari
splash of lemon or lime juice

Instructions

Heat the oil in a large frying pan or wok, over med/high heat. Add the pak choi stalks, green onions, ginger and garlic, and stir for 2-3 min, until fragrant.

Add the pak choi leaves, spinach, tamari, and lemon/lime juice. Cover immediately, and turn heat to low for 3-5 min, until the spinach and pak choi are bright green and slightly wilted.

Serve over brown rice or rice noodles. For a full meal, add braised tofu (or prawns or chicken), and a green salad (or veggie sticks).
