Pasta Al Pomodoro Cruda (raw tomato sauce/no cooking!)

Ingredients

1 lb ripe Tomatoes, chopped (Roma is preferred)
1 large clove Garlic, minced
¼ C chopped fresh Basil
¼ C chopped fresh Oregano
¼ C chopped fresh Parsley
¼ C extra virgin Olive oil
Salt and pepper to taste
4 oz. fresh Mozzarella, cut into small dice
¼ C shaved Parmesan cheese
1 lb Penne, cooked "al dente", drained

Instructions

Combine the tomatoes, garlic, basil, oregano, parsley, oil, and salt and pepper in a mixing bowl. Add the hot pasta, toss gently and stir in the fresh mozzarella. Taste for seasoning and serve with shaved Parmesan cheese on top. Serves 4-6.
