West African Jollof Rice

If you're looking for a mid-week getaway to Africa, this authentic meal (see also Mali Sweet Potatoes) is a good starting point. You might want to crank up the thermostat and let your imagination take you into Africa!

Ingredients

3 tbsp olive oil
2 large onions, thinly sliced
2 large green peppers, diced
1 tsp cayenne pepper
1 tsp black pepper
1/2 tsp ground allspice
8 oz tomatoes, finely chopped
1/2 cup tomato paste
1 tbsp chopped fresh thyme
2 cups rice, rinsed
salt to taste

Instructions

Heat oil in a large pan over medium heat. Add onions, peppers and spices. Increase heat and saute for 1 minute. Add tomatoes and saute for 1 minute. Stir in tomato paste and thyme; saute for 1 minute. Add the rice, mix well, and cover with water. Cover and bring to a boil. Reduce heat and simmer until water is absorbed, about 15 minutes. Season with salt and serve. Serves 4-6.
