Aloo Gobi (Indian curry dish)

Ingredients

1 head cauliflower
3 medium potatoes
1 onion, sliced thinly
3 Tbsp olive oil
1 tsp mustard seeds
2 to 3 cardamom pods
1 tsp coriander
1 tsp cumin seeds
1/2 tsp turmeric
1 bay leaf
3 cloves

Instructions

1. Steam potatoes in a sauce pan 10 to 15 minutes; remove and rinse with water. Cut into bite-sized pieces.

2. Cut cauliflower into bite-sized pieces.

3. Heat oil over medium heat; add mustard seeds and wait until they start popping. Add remainder of spices (except turmeric), and stir 2 to 3 minutes.

4. Add onions first, then cauliflower. Stir to coat with spices, and saute 2 to 3 more minutes. Repeat with potato pieces.

5. Add turmeric and stir over medium heat for another 2 to 3 minutes.

6. Add 1/2 cup of water and reduce heat to low. Cover pan and let simmer for 5 minutes. Check veggies for doneness; if they are not done, add another 1/4 cup of water and cook 5 more minutes. Enjoy!
