Apple Bread Pudding

Ingredients

2 C of grated Apples (approximately 6 small apples)
Juice of one whole Lemon
4 C of Whole grain bread (diced into small cubes)
2/3 C of Dried fruit (raisins, cranberries, or diced dates)
2 tsps Cinnamon
1 ˝ C Soy or cow’s milk
˝ C Maple Syrup
1 Egg or equivalent in egg replacer

Instructions

In a bowl, mix lemon juice with the grated apple. In a separate bowl, blend the milk, egg or egg replacer, maple syrup, cinnamon and vanilla together. Place one third of the bread in the bottom of a greased 8" by 8" baking dish and cover with 1 cup of the apples and half the dried fruit. Pour one cup of the liquid mixture over these ingredients. Repeat the layers of bread, apple and dried fruit, ending with a top layer of bread. Pour the rest of the liquid ingredients over the entire mixture. Sprinkle with more cinnamon. Let pudding sit for 10 minutes. Bake, covered, at 350° F for 45 minutes. Let stand for 10 to 20 minutes at room temperature before serving. Great for dessert or breakfast.
