Canada Day Cake (Kiwi cake with Strawberry Topping )

Ingredients

Kiwi Cake:

1 ½ C Flour (whole wheat works well)
1 Tbs Baking powder
½ tsp Salt
¾ C Sugar
1 Egg or egg substitute, beaten
½ C Butter (melted) or oil
110 ml Milk or Soy Milk
1 Tbs Grated lemon rind
1 ½ C Kiwis, peeled and chopped (approximately 4 kiwis)
¼ C Walnuts, chopped

Honey Icing:

½ C Sugar
¼ C Honey
pinch of Salt
½ C Marshmallows (diced)
1/8 C Water
1 Egg white or substitute, stiffly beaten

Instructions

Kiwi Cake:

Preheat oven to 400° F. Sift together the first 4 ingredients. Stir in the egg, butter, and milk, just until moistened. Fold in the lemon rind, kiwis, and nuts. Pour into a cake pan (8”x 8”) and bake for approximately 30 minutes.

Honey Icing:

Combine sugar, honey, water, and salt. Gently boil until sugar dissolves. Add marshmallows. Pour slowly, beating constantly, onto egg white. Beat until thick and creamy.

Spread the icing over the top and sides of the cake. On the top of the cake arrange sliced strawberries into the shape of a Maple Leaf (this may take a bit of practice, but it is well worth the effort – a true crowd pleaser!)
