Swiss Chard Gratin

This is so yummy! A great alernative to potatoes!

Ingredients

1 to 2 bunches of Swiss Chard - washed and rough chopped
1 Tbsp butter
1Tbsp Olive Oil
1 small onion, diced
1 garlic clove, minced
1/4 cup all purpose flour
1 3/4 cup cream (or milk)
1/4 tsp. cayenne pepper
1 pinch salu
1 pinch pepper
1 pinch nutmeg
1/3 cup shredded cheese (gruyere, parmesean, gouda or mozza)

Instructions

Wash and rough chop the Swiss Chard
In a small saucepan, heat butter and oil over medium heat. Cook onion and garic untill softened, about 3 mins. Stir in flour and cook about 1 mim. Whisking constantly add milk, 1/2 cup at a time. Whisk in cayenne, salt, pepper and nutmeg. Reduce heat to simmer, add shredded cheese. Stir often intill thickened.

Grease the bottom of a shallow baking dish. put 1/2 the swiss chard in dish and cover with half the cheese sauce, add remaining chard and cover with the rest of the sauce

Bake at 400 for about 20-30 mins untill bubbly and browned!
