New Potatoes with Turmeric

Ingredients

1 1/2 lbs unpeeled New potatoes
6 Tbs Vegetable oil
1 Tbs black Mustard seeds
1 tsp Cumin seeds
1 tsp Turmeric
1 tsp ground Coriander
1 tsp ground Cumin
1/2 tsp Cayenne

Instructions

Dice potatoes into small pieces. Heat vegetable oil in a wok or frying pan over medium heat. When hot, quickly add black mustard seeds and cumin seeds, then stir in the potatoes. Sprinkle in turmeric and cook, shaking often, for about 15 minutes, or until lightly browned and almost cooked through. Just before the potatoes are done, sprinkle in coriander, ground cumin, cayenne, and salt to taste. Drain any excess oil in a colander before serving.
