Yam Mousse Pie (aka Vamoose Pie)

Great served with green beans or asparagus!

Ingredients

1 pie crust
1 cup peeled + cooked yams (cooled)
1 cup cooked carrots (cooled)
1/3 pkg Silver King firm tofu
1/4 cup nut butter (your favourite)
Soy/rice/almond milk (to taste)
1 egg (optional)
Spices (5-spice, or a mixture of cinnamon, cloves, nutmeg, and ginger to taste)

Instructions

Pre-bake pie crust for 10 minutes to avoid mushiness.

Blend the veggies, tofu, nut butter, and spices in food processor until fluffy, adding small amounts of soy, rice, or almond milk if too stiff (but mixture should be stiff and fluffy, not runny, so don't add too much liquid!).

Add one raw egg (optional), and process.

Smooth into pie shell and bake at 375 F for approx 30 minutes. (Should become a little golden on top).
