Yam Stir-fry

Ingredients

2 lbs Yams, peeled and cut into 1/2-inch cubes
2 Tbs Oil
1/2 C golden Raisins
1/2 C Orange juice
1 Tbs Honey
1 C Vegetable broth
1/4 tsp each ground Cloves and ground Nutmeg
1/2 C sweetened, shredded dried Coconut
About 1/4 C roasted, salted Almonds

Instructions

To a 10- to 12-inch frying pan over medium-high heat, add oil. When oil is hot, add yam cubes; stir often until tender-crisp to bite, about 7 minutes. Stir in raisins, orange juice, honey, 1/2 cup broth, cloves, and nutmeg. Cover and simmer gently 10 minutes. Add remaining 1/2 cup broth; cover and simmer until yams are tender to bite and most of the liquid is absorbed, about 25 minutes total. Stir in shredded coconut, and pour the yam mixture into a bowl. Sprinkle with almonds. Serves 8.
