It’s shocking sometimes. You grab a beautiful, crisp summer apple from the bowl and sink your teeth into it, juices racing through your mouth, only to have the muscles at the back of your jaw go into fits and spasms. It's the sudden reality of eating a tart apple. The second bite is always less dramatic and some people prefer these tangy apples to sweet.
